  • 8 oz jar oil-packed sun-dried tomatoes (chopped)
  • 1 large onion (diced)
  • 3 large carrots (diced)
  • 2 stalks celery (diced)
  • 5 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • 5 cups chicken broth
  • 1 pound shelf-stable gnocchi
  • 2 cups shredded cooked chicken
  • 34 oz baby spinach
  • 12 oz can evaporated milk
  • 2 Tbsp tomato paste
  • 1 Tbsp chicken base
  • 2 ½ Tbsp flour
  • 2 Tbsp reserved sun-dried tomato oil
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • ½ tsp pepper

Instructions

  1. Heat reserved sun-dried tomato oil in a large pot over medium heat. Sauté onion, carrots, and celery for about 5 minutes until softened.
  2. Stir in sun-dried tomatoes, garlic, Italian seasoning, smoked paprika, onion powder, salt, and pepper; sauté for another minute.
  3. Add tomato paste, chicken base, and flour; stir well and cook for about 1 minute.
  4. Pour in chicken broth, scraping the bottom to incorporate browned bits; bring to a simmer.
  5. Partially cover and simmer on low for about 15 minutes.
  6. Stir in shredded chicken, spinach, evaporated milk, and gnocchi; cook until heated through (5-10 minutes).
  7. Serve topped with grated parmesan cheese.
