  • 2 1/4 cups mashed overripe bananas
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Mash the bananas until you have 2 1/4 cups.
  2. In a bowl, mix flour, salt, baking soda, and nutmeg.
  3. Cream butter with both sugars until fluffy. Add cinnamon, eggs, vanilla extract, and mashed bananas; mix well.
  4. Combine banana mixture with dry ingredients and stir gently until just mixed.
  5. Pour batter into a greased baking pan. Place trivet in Instant Pot with 1 cup of water.
  6. Cover the pan with aluminum foil and lift it out easily later using foil handles.
  7. Seal the lid of the Instant Pot and cook on manual for 50 minutes followed by a quick release.
  8. Carefully remove the pan using foil handles and let cool before slicing.
