Ingredients

Scale
  • 1 package croissant dough (store-bought)
  • 2 cups whole milk (or non-dairy milk)
  • 0.5 cups granulated sugar (or coconut sugar)
  • 0.25 cups cornstarch
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter (or vegan butter)
  • 1 cup heavy cream (or coconut cream)
  • 8 ounces semi-sweet chocolate (or dark chocolate)

Instructions

  1. 1. Prepare the custard filling: Heat the milk until steaming. Whisk together sugar, cornstarch, and egg yolks in a bowl. Gradually add hot milk while whisking, then return to saucepan and cook until thickened. Stir in vanilla and butter, then chill.
  2. 2. Bake croissants: Preheat oven as per dough instructions. Roll out dough if necessary and cut into triangles. Place custard on wide end of each triangle, roll up, and place on a baking sheet.
  3. 3. Make ganache: Heat cream until simmering; pour over chopped chocolate and let sit before stirring until smooth.
  4. 4. Assemble: Bake croissants until golden brown; drizzle warm ganache over cooled pastries.
