Ingredients

Scale
  • 1 ½ lbs steak (sirloin, ribeye, or New York strip), cut into bite-sized pieces
  • 8 oz small pasta shells
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)
  • ½ cup reserved pasta water (if needed to thin the sauce)

Instructions

  1. Cook the pasta: Boil salted water and cook the pasta shells until al dente. Reserve ½ cup of the water before draining.
  2. Prepare steak: Pat the steak dry, season with salt, pepper, smoked paprika, and optional red pepper flakes.
  3. Sear steak: Heat olive oil in a large skillet over medium-high heat. Sear steak bites for about 2 minutes per side until browned. Remove from skillet.
  4. Make garlic butter: Lower heat, add butter and minced garlic to skillet; stir until fragrant. Return steak to pan and toss to coat.
  5. Prepare creamy sauce: In another pan, melt butter over medium heat, sauté garlic briefly, then add heavy cream and simmer. Stir in Parmesan cheese until thickened.
  6. Combine: Mix drained pasta with the creamy sauce; add reserved pasta water if needed.
  7. Serve: Plate the creamy pasta alongside garlic butter steak bites, garnished with parsley.
