  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon thyme
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a small bowl, combine garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub this mixture evenly over both sides of the chicken breasts.
  2. In a medium pot, bring chicken broth and 1/2 teaspoon salt to a boil. Stir in rice, cover with a lid, and reduce heat to low. Allow to simmer for about 18-20 minutes until tender and all liquid is absorbed. Remove from heat and set aside.
  3. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts. Cook for approximately 6-7 minutes on each side until golden brown and fully cooked through. Remove from skillet and set aside.
  4. In the same skillet used for the chicken, melt butter over medium heat. Whisk in flour; cook for about 1 minute until lightly golden. Gradually add whole milk along with 1/2 cup chicken broth while whisking constantly to prevent lumps. Continue cooking until thickened (about 3-4 minutes).
  5. Stir in garlic powder, thyme, shredded cheddar cheese, and grated Parmesan cheese into the sauce. Keep stirring until all cheese is melted and sauce is smooth.
  6. Return cooked chicken back into the skillet. Spoon creamy sauce over each piece. Let simmer an additional 3-4 minutes to reheat through.
  7. Plate fluffy rice first, then top with smothered chicken. Garnish with freshly chopped parsley before serving immediately.
