  • 3 tablespoons unsalted butter (divided, melted)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1/4 teaspoon salt
  • 3 tablespoons apricot preserves
  • 1 tablespoon coconut sugar
  • 1/2 teaspoon ground cinnamon (divided)
  • Pinch of ground nutmeg
  • 1 sheet puff pastry (defrosted)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Core and slice the apples into thin (1/8-inch) slices. Toss them with melted butter, lemon juice, and salt, then spread on the baking sheet and bake for 10 minutes until softened.
  3. In another bowl, mix coconut sugar with cinnamon and nutmeg. Grease a muffin tray with remaining melted butter.
  4. Roll out the puff pastry into a rectangle (12 by 10 inches) and brush with apricot preserves; sprinkle with the coconut sugar mixture.
  5. Cut the pastry into six strips (10 by 2 inches) and layer apple slices along each strip, folding the bottom edge over before rolling into rose shapes.
  6. Place each rose in the greased muffin pan and bake for 40-45 minutes until golden brown.
