  • 1 cup sugar
  • 2/3 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 1/4 cups flour
  • 4 packets instant hot cocoa mix
  • 1 1/4 tsp baking soda
  • 1 tsp baking powder
  • 1 cup chocolate chips
  • 1 cup Jet-Puffed vegan marshmallows bits

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy.
  3. Add eggs and vanilla to the mixture, beating until well combined.
  4. In a separate bowl, whisk together flour, hot cocoa mix, baking soda, and baking powder.
  5. Gradually incorporate the dry ingredients into the wet mixture on low speed until fully blended.
  6. Fold in chocolate chips and vegan marshmallow bits gently with a spatula.
  7. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them apart.
  8. Bake for about 9 minutes or until slightly underbaked; they will firm up as they cool.
  9. Optionally press additional chocolate chips and vegan marshmallows into warm cookies before serving.
