  • 1 lb boneless skinless chicken (breast or thighs), chopped
  • 1 tbsp olive oil
  • 2 tbsp honey
  • Juice of 1 lime
  • 1 clove garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 ripe avocado, diced
  • 1 head romaine or butter lettuce, leaves separated
  • 1 cup canned black beans, rinsed
  • 1 cup corn (canned, fresh, or thawed if frozen)
  • 2 tbsp chopped cilantro
  • 1 cup Greek yogurt
  • 1 tbsp lime juice
  • 1 tsp chipotle or smoked paprika

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the chopped chicken to the skillet.
  2. Stir in honey, lime juice, garlic, cumin, smoked paprika, salt, and pepper. Cook for 8-10 minutes until browned and cooked through. Set aside.
  3. In a small bowl, mix Greek yogurt, lime juice, chipotle (or paprika), and salt until smooth. Chill until ready to use.
  4. Lay out lettuce leaves on a serving platter. Fill each leaf with a spoonful of chicken mixture.
  5. Top with diced avocado, black beans, corn, red onion, and chopped cilantro.
  6. Drizzle the chipotle-lime sauce over each filled lettuce cup.
  7. Serve right away while warm and crisp for the best experience!
