  • 1 tbsp honey
  • 1/2 tbsp soy sauce or tamari
  • 1 tsp olive oil
  • 1 garlic clove, minced
  • 1 cup green beans, trimmed
  • 1 cup baby potatoes, halved
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss halved baby potatoes in olive oil, salt, and pepper, placing them cut-side down on a baking sheet. Roast for 20-25 minutes until golden and crispy.
  3. In a non-stick skillet over medium heat, sauté green beans with minced garlic for about 5-6 minutes. Season lightly with salt and pepper.
  4. In another pan, heat olive oil over medium-high heat. Cook the salmon skin-side down for about 4-5 minutes until golden brown, then flip it carefully. Brush the salmon with the honey-soy mixture and cook for an additional 2-3 minutes until caramelized.
  5. Plate the salmon alongside sautéed green beans and crispy potatoes, garnishing with fresh parsley if desired.
