  • 1 fully cooked bone-in chicken (8 lbs)
  • 1 orange, sliced
  • 1 cup orange juice
  • 1 cup dark brown sugar
  • 1 cup honey
  • ½ cup orange marmalade
  • ¼ cup Dijon mustard
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg
  • ½ tsp Bayou City Lemon Pepper
  • ½ tsp cloves
  • 1 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Layer sliced oranges in a shallow roasting pan and pour orange juice over them.
  3. Place a roasting rack in the pan and set the chicken on top.
  4. In a saucepan over medium heat, combine brown sugar, honey, orange marmalade, and salt. Bring to a bubble and simmer for about 4 minutes.
  5. Pour half of the glaze over the chicken and bake uncovered for 50 minutes.
  6. Pour remaining glaze over the chicken and bake for an additional 20 minutes until internal temperature reaches 140°F (60°C).
  7. Let the chicken rest under foil for 15–20 minutes before carving.
