  • 1 Tablespoon active dry yeast
  • 1/4 cup honey (or sugar)
  • 2 teaspoons salt
  • 2 Tablespoons oil (canola or vegetable)
  • 45 1/2 cups all-purpose flour

Instructions

  1. In a large bowl, combine warm water, yeast, and a pinch of honey or sugar. Let it rest until foamy (5-10 minutes).
  2. Stir in remaining honey or sugar, salt, oil, and 3 cups flour.
  3. Gradually add more flour until the dough pulls away from the bowl but remains slightly sticky.
  4. Knead for about 4-5 minutes until smooth and elastic.
  5. Place in a greased bowl, cover, and let rise in a warm area until doubled (about 1½ hours).
  6. Prepare two greased 9×5 inch bread pans.
  7. Punch down the risen dough, divide into two portions, shape into logs, and place in pans.
  8. Cover and let rise again until about an inch above the pan edges (45 minutes to an hour).
  9. Preheat oven to 350°F and bake for 30-33 minutes until golden brown.
  10. Cool on a wire rack before slicing.
