  • 1 lb ground chicken sausage (or turkey)
  • 2 ribs celery (diced)
  • 1 yellow onion (diced)
  • 2 large carrots (diced)
  • 5 cloves garlic (minced)
  • 1 medium zucchini (diced)
  • 1 Yukon gold potato (diced)
  • 1 cup green beans (trimmed and diced)
  • 2 cans beans (red kidney and navy beans, drained)
  • 1 can fire roasted diced tomatoes
  • 5 cups chicken broth
  • ½ cup uncooked ditalini pasta

Instructions

  1. In a large pot or Dutch oven, heat over medium heat. Add the ground chicken sausage and cook until browned. Remove from pot and set aside.
  2. Sauté celery, onion, carrots, salt, pepper, and optional chili flakes for about 8-10 minutes until softened.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Return the cooked sausage to the pot along with zucchini, potato, green beans, both types of beans, diced tomatoes, broth, and bay leaves; stir well.
  5. Bring to a gentle boil then reduce heat to simmer for 30-45 minutes until potatoes are tender.
  6. Stir in pasta and simmer for an additional 7-10 minutes until cooked al dente.
  7. Remove bay leaves before serving hot.
