  • 4 chicken thighs or breasts
  • 2 tbsp olive oil
  • 800 g potatoes
  • 400 g baby carrots
  • 250 ml chicken broth
  • 200 ml heavy cream
  • Fresh herbs (thyme, parsley, oregano)
  • 1 tsp paprika
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 1 tsp Dijon mustard
  • 1 tsp dried thyme
  • 1 tsp parsley
  • 1 tsp oregano
  • 50 g butter
  • 100 ml warm milk
  • Salt & nutmeg
  • 1 tbsp honey or brown sugar
  • Salt & parsley

Instructions

  1. Season chicken with paprika, salt, and pepper. Sear in olive oil over medium-high heat until golden brown. Set aside.
  2. In the same skillet, melt butter; sauté minced garlic, then add chicken broth and heavy cream. Stir in mustard and herbs, then return chicken to simmer until cooked through.
  3. Boil potatoes until soft, mash with butter and warm milk; season with salt and nutmeg.
  4. Steam carrots until tender, then toss with melted butter and honey or brown sugar for glazing.
  5. Serve by plating mashed potatoes and glazed carrots alongside the herb cream chicken.
