  • 1 tablespoon oil (optional)
  • 1 large yellow onion, chopped
  • 10 ounces mushrooms, sliced
  • 5 cloves garlic
  • 2 medium carrots, sliced
  • 1.5 pounds yellow potatoes, cubed
  • 1 (14.5 oz) can crushed tomatoes
  • 3.5 cups vegetable broth
  • 1 bay leaf
  • 1 tablespoon tamari or soy sauce
  • Salt and black pepper to taste
  • 1 (15 oz) can chickpeas

Instructions

  1. In a large soup pot over medium heat, add oil if using. Sauté the onion and mushrooms for about 8 minutes until mushrooms are tender.
  2. Stir in garlic and carrots; cook for another 2 to 3 minutes.
  3. Add crushed tomatoes, potatoes, vegetable broth, bay leaf, tamari or soy sauce, salt, and pepper. Bring to a simmer and cover with a lid on low heat for around 20 minutes.
  4. Stir in chickpeas and continue cooking uncovered for a few more minutes until slightly thickened. Remove bay leaf before serving.
