  • 8 oz pecans
  • 8 oz walnuts
  • 15 small jarred cherries
  • 1 1/4 lbs mixed crystallized fruits
  • 12 oz pitted dates, chopped
  • 3 oz raisins
  • 2 oz sliced pineapple, diced
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon ground allspice
  • 3/4 teaspoon ground cloves
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2/3 cup granulated sugar
  • 1/2 cup butter
  • 2 eggs
  • 1/4 cup dark corn syrup
  • 1/8 cup juice from the canned pineapple and jarred cherries

Instructions

  1. Preheat oven to 350°F (175°C) and grease/flour a bundt pan.
  2. In a bowl, mix flour, baking powder, ground allspice, ground cloves, ground cinnamon, and salt.
  3. In another bowl, beat butter and sugar until fluffy; add eggs one at a time.
  4. Gradually mix the dry ingredients into the wet mixture, alternating with dark corn syrup and fruit juices.
  5. Fold in chopped dates, crystallized fruits, raisins, diced pineapple, pecans, walnuts, and jarred cherries until evenly blended.
  6. Pour batter into the bundt pan and smooth the top.
  7. Bake for about 60 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
