  • 2 cups grated zucchini (about 2 medium)
  • 1 cup grated carrots (about 2 medium)
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts or pecans
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a large bowl, whisk together whole wheat flour, brown sugar, baking soda, cinnamon, nutmeg, cloves, and salt until well combined.
  3. Stir in grated zucchini, grated carrots, raisins, and nuts until well combined.
  4. In another bowl, whisk together eggs, vegetable oil, milk, and vanilla extract until smooth.
  5. Gently combine the wet and dry mixtures until just mixed; avoid overmixing.
  6. Fill each muffin cup two-thirds full and bake for 20-25 minutes until a skewer comes out clean.
