  • 175 g baking spread (or butter), softened
  • 175 g caster sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 175 g self-raising flour
  • 25 g black food coloring
  • 200 g butter, softened (for frosting)
  • 400 g icing sugar
  • Green food coloring (for frosting)
  • Yellow food coloring (for frosting)
  • 150 g tinned custard

Instructions

  1. Preheat your oven to 140C Fan/325F/Gas Mark 3. Line your cupcake tin with cases.
  2. Beat together baking spread and caster sugar in a mixing bowl until fluffy. Add eggs one at a time, followed by vanilla extract.
  3. Fold in self-raising flour and black food coloring until well combined.
  4. Divide the batter among the cupcake cases and bake for 25–30 minutes until a skewer comes out clean.
  5. Cool completely, then core each cupcake and fill with green-tinted custard.
  6. For the frosting, beat together softened butter and icing sugar, adding vanilla extract and food coloring to achieve the desired shade.
  7. Pipe the green buttercream onto the cooled cupcakes and decorate with candy eyes and sprinkles.
