  • 1/4 tsp cream of tartar
  • 1/2 cup white sugar
  • 1 stick unsalted butter (softened)
  • 2 cups confectioner's sugar
  • 2 tbsp milk
  • Purple gel food coloring
  • Black decorating frosting

Instructions

  1. Preheat oven to 200°F (93°C) and line a baking sheet with parchment paper.
  2. Beat egg whites in a bowl on low speed, adding cream of tartar. Gradually add sugar while increasing to high speed until stiff peaks form.
  3. Pipe mounds of meringue onto the baking sheet and bake for 2 hours. Turn off the oven and let the meringues cool inside for an additional 30 minutes.
  4. For the frosting, mix softened butter, confectioner’s sugar, and milk until smooth. Add purple gel food coloring and mix until combined.
  5. Frost cooled cupcakes with purple buttercream and decorate with meringue ghosts.
