  • 250g ground beef (or ground turkey)
  • 1 red bell pepper
  • 1 zucchini
  • 1 cup broccoli florets
  • 1 cup mushrooms
  • 1 tbsp soy sauce
  • 1 tbsp hoisin sauce (or teriyaki sauce)
  • 1 garlic clove, minced
  • 1 tsp sesame oil or neutral oil
  • 1 tbsp olive oil
  • 1 cup cooked jasmine or basmati rice (from ~ ½ cup uncooked)
  • Salt & pepper to taste

Instructions

  1. In a large skillet, heat sesame oil over medium heat. Add minced garlic and ground beef, cooking until browned. Stir in soy sauce, hoisin sauce, and diced red bell pepper; simmer for 5 minutes.
  2. In another pan, heat olive oil and sauté sliced zucchini, broccoli, red bell pepper, and mushrooms until tender-crisp (about 4-5 minutes). Season with salt and pepper.
  3. Assemble bowls by adding warm rice followed by the ground beef mixture and sautéed vegetables on top.
