  • 1 boneless chicken breast
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 cup jasmine or basmati rice
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp lemon juice or vinegar
  • Salt & pepper to taste

Instructions

  1. Rinse the rice under cold water until clear. In a pot, combine the rice with 1 cup of water and a pinch of salt. Bring to a boil, reduce heat, cover, and simmer until fluffy (about 15 minutes).
  2. Rub the chicken breast with olive oil, smoked paprika, garlic powder, salt, and pepper. Preheat your grill or skillet over medium heat and cook the chicken for about 5-6 minutes on each side until fully cooked (internal temperature should be 165°F).
  3. In a bowl, mix halved cherry tomatoes and sliced cucumber. Drizzle with olive oil and lemon juice (or vinegar), seasoning with salt and pepper before tossing.
  4. Serve the grilled chicken slices on a plate alongside fluffy rice and generous helpings of the salad.
