  • 18 ounces green enchilada sauce
  • 3 cups cooked chicken (rotisserie or leftover)
  • 8 ounces cream cheese
  • 4 ounces canned green chilis
  • 3 cups cheddar cheese (shredded)
  • 8 large flour tortillas
  • optional toppings: sour cream, salsa, chopped tomatoes, avocado

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Lightly spray a 9" x 13" baking dish and spread about 1 cup of enchilada sauce on the bottom.
  3. In a bowl, mix cooked chicken, cream cheese, green chilis, and 2 cups of cheddar cheese until well combined.
  4. Fill each tortilla with approximately 1/2 cup of the chicken mixture; roll tightly and place seam-side down in the baking dish.
  5. Pour remaining enchilada sauce over the rolled tortillas and top with an additional cup of shredded cheese.
  6. Bake uncovered for about 30 minutes until heated through and cheese is golden brown.
  7. Serve warm with desired toppings.
