  • ¼ cup beef broth or water
  • 2 tbsp olive oil

Instructions

  1. Gather and chop all ingredients: onion, garlic, tomatoes, potatoes, and roast the green chiles if needed.
  2. In a skillet over medium heat, heat olive oil. Add chopped onion and minced garlic; sauté until translucent.
  3. Add ground beef (or turkey) and cook until browned.
  4. Stir in diced tomatoes and roasted green chiles; cook for about 5 minutes.
  5. Add diced potatoes, season with spices, and stir well.
  6. Pour in beef broth or water, cover the skillet, and let simmer for about 20 minutes until potatoes are tender.
