  • 1 cup cucumber, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • Red onion, thinly sliced
  • 1 cup Kalamata olives
  • 1 cup feta cheese, cubed
  • 1 tbsp olive oil
  • 1 tsp apple vinegar
  • 1 tsp dried oregano
  • Salt & freshly cracked black pepper, to taste

Instructions

  1. Slice cucumber into half-moon shapes.
  2. Halve cherry tomatoes or chop larger tomatoes into bite-sized pieces.
  3. Thinly slice red onion.
  4. In a large bowl, combine cucumber, tomatoes, red onion, Kalamata olives, and cubed feta cheese.
  5. In a small bowl, whisk together olive oil, apple vinegar, dried oregano, salt, and black pepper until well combined.
  6. Pour dressing over salad mixture and toss gently to coat evenly.
  7. Serve fresh.
