  • 2 tablespoons extra virgin olive oil
  • 1 cup cooked brown rice or quinoa
  • 1 medium Persian cucumber
  • 8 cherry tomatoes
  • 10 kalamata olives
  • 4oz / 115g Greek yogurt (non-fat preferred)
  • Squeeze of lemon juice
