  • 1 1/2 teaspoons instant espresso
  • 2 large egg whites, at room temperature
  • 5 tablespoons white sugar
  • 3 large egg yolks, at room temperature
  • 2 large whole eggs, at room temperature
  • 3 tablespoons white sugar
  • 7/8 cup chilled heavy cream
  • 3 tablespoons confectioners’ sugar
  • 3/4 teaspoon vanilla extract
  • 1/2 cup chilled mascarpone cheese
  • Brewed coffee (substituting liqueur)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together flour and espresso; set aside.
  3. Beat egg whites until soft peaks form, then gradually add sugar until stiff peaks form.
  4. In another bowl, beat egg yolks and whole eggs with sugar until thick; fold in flour mix, then carefully fold in whipped egg whites.
  5. Pour batter onto the baking sheet and bake for about 8 minutes until springy.
  6. Cool slightly, roll into a log shape with parchment paper, and let cool completely.
  7. For the cream filling, beat heavy cream with confectioners’ sugar, vanilla, and brewed coffee; then incorporate mascarpone until smooth.
  8. Unroll cooled cake, spread half the cream filling, roll back up, cover with remaining filling, dust with cocoa powder, and serve.
