  • 20 Medjool dates
  • 250 g turkey bacon (diced)
  • 40 g walnuts (roughly chopped)
  • 1 tbsp rosemary (finely diced)
  • 1 tbsp maple syrup
  • 1 tbsp brown sugar
  • 250 g goat cheese
  • Zest of 1 orange
  • 1 tbsp olive oil
  • Salt and pepper

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Slice the dates lengthwise and remove the pits without splitting them completely.
  3. In a cold pan, cook diced turkey bacon over high heat for about 3 minutes. Add walnuts, rosemary, maple syrup, and brown sugar; cook until crispy, about 5 minutes.
  4. In a food processor, blend goat cheese, orange zest, olive oil, salt, and pepper until smooth.
  5. Stuff each date with about a teaspoon of the goat cheese mixture and place on a baking tray. Top with the turkey bacon mixture.
  6. Bake for approximately 10 minutes until heated through and serve warm.
