  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp olive oil
  • 1 avocado, diced
  • 56 cherry tomatoes, halved
  • 1 cup shredded carrots
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Pat dry the chickpeas and toss them in a mixing bowl with olive oil, smoked paprika, cumin, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until crispy.
  2. In boiling water, gently place the egg and cook for 6-7 minutes for a jammy yolk. Transfer to ice water before peeling and slicing in half.
  3. Layer arugula or mixed greens in a serving bowl. Top with roasted chickpeas, diced avocado, cherry tomatoes, shredded carrots, and the soft-boiled egg.
  4. Season with salt and pepper to taste. Drizzle with additional olive oil or your favorite dressing if desired.
