  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 4 garlic cloves
  • 1 shallot
  • 1 can (14 oz) cherry tomatoes
  • 2 mozzarella balls
  • Fresh basil leaves
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • 1 tsp dried basil
  • 2 tbsp tomato paste
  • ½ cup chicken broth

Instructions

  1. Season chicken fillets with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil and butter in a skillet over medium-high heat; cook chicken until browned (about 5 minutes per side). Remove and cover.
  3. In the same skillet, sauté minced garlic and chopped shallot until fragrant. Deglaze with apple vinegar.
  4. Stir in salt, pepper, dried basil, tomato paste, chicken broth, and cherry tomatoes; simmer for 5 minutes.
  5. Return chicken to skillet; top with chopped basil and mozzarella. Simmer an additional 5 minutes or bake at 400°F for golden perfection.
