  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Wash and halve the baby potatoes; set aside.
  2. Mince the garlic.
  3. Rub chicken breasts with olive oil and season with Italian seasoning, salt, black pepper, and optional red pepper flakes.
  4. Layer halved potatoes at the bottom of the crockpot and place seasoned chicken on top.

  6. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender.
