  • 450 g chicken breast, cut into cubes
  • 200 g mushrooms, sliced
  • 600 g baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tsp dried Italian herbs
  • 1 tsp paprika
  • Salt & pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 200C (400F).
  2. In a mixing bowl, toss the halved baby potatoes with olive oil, garlic powder, dried oregano, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden brown.
  3. Meanwhile, heat olive oil in a skillet over medium-high heat. Add chicken cubes seasoned with salt, pepper, paprika, and dried Italian herbs. Cook until golden brown (about 5-7 minutes).
  4. Stir in minced garlic, sliced mushrooms, and diced bell pepper. Cook for another 5-6 minutes until vegetables are tender.
  5. Serve garnished with fresh parsley alongside the roasted potatoes.
