Ingredients

  • Chicken drumsticks
  • Garlic cloves
  • Olive oil
  • Dried thyme
  • Dried rosemary
  • Salt
  • Black pepper
  • Carrots
  • Bell peppers (any color)
  • Zucchini

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, combine minced garlic, olive oil, dried thyme, dried rosemary, salt, and black pepper.
  3. Add chicken drumsticks to the marinade and toss until fully coated; let marinate for at least 10 minutes.
  4. Chop carrots, bell peppers, zucchini, and red onion into bite-sized pieces and place them on a baking sheet.
