  • 8 chicken drumsticks
  • 3 tbsp olive oil (divided)
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt & pepper (to taste)
  • 600 g potatoes, cubed
  • 3 carrots, chopped
  • 1 red bell pepper, chopped

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. In a mixing bowl, combine 3 tbsp olive oil, minced garlic, thyme, oregano, paprika, salt, and pepper. Add chicken drumsticks and coat evenly.
  3. In another bowl, toss potatoes, carrots, and red bell pepper with remaining olive oil and season with salt and pepper.
  4. Spread the vegetable mixture on a baking tray and nestle the marinated chicken among them.
  5. Roast for about 40-45 minutes, turning the drumsticks halfway through until golden brown and cooked through.
  6. Garnish with freshly chopped parsley before serving.
