  • 2 medium potatoes, peeled & diced
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 1 tbsp butter (for salmon)
  • 1 tbsp olive oil
  • 1 garlic clove, smashed
  • 1 tsp paprika
  • Salt & pepper to taste
  • 1 tbsp butter (for carrots)
  • 1 tsp honey or maple syrup
  • Pinch of chili flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Toss diced potatoes with olive oil, garlic powder, salt, and pepper on a baking sheet. Roast for 25-30 minutes until golden brown and crispy.
  2. In a skillet over medium heat, melt butter and add smashed garlic. Season the salmon fillet with paprika, salt, and pepper before cooking for about 4-5 minutes per side until cooked through.
  3. Steam baby carrots for about 5 minutes until tender. Melt butter in a small pan and stir in honey; toss the steamed carrots in this glaze.
  4. Steam broccoli florets for approximately 3-4 minutes until bright green and tender-crisp.
  5. Serve the garlic butter salmon alongside roasted potatoes, glazed carrots, and steamed broccoli.
