  • 1 large egg
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped parsley
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil (for searing)
  • 4 tbsp unsalted butter
  • 5 cloves garlic, minced
  • ¼ tsp red pepper flakes (optional)
  • 1 tbsp lemon juice
  • 1 tbsp chopped parsley
  • Salt to taste
  • 12 oz linguine
  • 1 tbsp butter
  • ¾ cup heavy cream
  • ¾ cup grated Parmesan
  • Salt & pepper to taste
  • Pasta water (as needed for consistency)

Instructions

  1. In a large bowl, combine ground beef, egg, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, salt, and black pepper. Mix until just combined and form into 1-inch meatballs.
  2. Heat olive oil in a skillet over medium heat and sear the meatballs until browned on all sides (about 6–8 minutes). Remove from skillet and set aside.
  3. In the same skillet, lower heat and add butter and minced garlic; sauté until fragrant (1–2 minutes). Stir in lemon juice and parsley before returning the meatballs to the pan. Simmer for about 5–7 minutes.
  4. Cook linguine according to package instructions. Reserve some pasta water. In a saucepan, melt butter and stir in heavy cream; bring to a gentle simmer before adding grated Parmesan cheese.
  5. Toss cooked linguine with the sauce until well coated; use reserved pasta water to adjust consistency if needed.
  6. Serve meatballs over creamy linguine and garnish with additional parsley.
