  • 2 chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp garlic powder
  • Salt & pepper
  • Fresh parsley, chopped (for garnish)
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 3 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • 1 cup milk
  • Salt & pepper

Instructions

  1. Boil the cubed potatoes in salted water until tender (15-20 minutes). Drain and mash with butter and milk; season to taste.
  2. In a skillet over medium heat, add olive oil and butter. Season chicken with garlic powder, salt, and pepper. Cook until golden brown (6-7 minutes per side); set aside.
  3. In the same skillet, sauté onion, bell peppers, minced garlic, and mushrooms until softened (5-7 minutes). Season to taste.
  4. Serve mashed potatoes topped with sliced chicken and surrounded by sautéed vegetables. Garnish with fresh parsley.
