  • 5 onions (thinly sliced)
  • 300 g cavatappi macaroni
  • 1/2 cup beef broth
  • 3 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 baguette (for breadcrumbs)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp oregano
  • 1 tsp sugar
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 1/2 tsp nutmeg

Instructions

  1. Slice the onions thinly and caramelize them in olive oil over medium heat for 30–40 minutes until golden brown. Add sugar if desired.
  2. Once caramelized, add beef broth and simmer for 10 minutes. Set aside.
  3. In the same skillet, create the béchamel sauce by whisking flour into melted butter, then gradually adding heavy cream until thickened.
  4. Stir in two-thirds of the caramelized onions and season with salt, pepper, parsley, and Parmesan cheese.
  5. Cook the cavatappi macaroni until just under al dente.
  6. Combine the pasta with the sauce and transfer to a baking dish. Top with remaining onions and breadcrumbs.
  7. Bake at 350°F (175°C) for 10–15 minutes until golden brown.
