  • 8 bone-in, skin-on chicken thighs
  • ½ cup Dijon mustard
  • 1 tablespoon extra-virgin olive oil
  • 2 large shallots
  • 2 cloves garlic
  • 1 teaspoon fresh thyme leaves
  • 1 cup dry apple vinegar
  • 1 cup chicken broth
  • ½ cup heavy cream
  • Salt and freshly ground pepper (to taste)

Instructions

  1. Season chicken thighs with salt and pepper, then coat with Dijon mustard.
  2. In a skillet, heat olive oil and sauté diced turkey bacon until golden; remove and set aside.
  3. Brown the seasoned chicken thighs in the same skillet for about 4-5 minutes per side; then remove.

  5. Deglaze the pan with apple vinegar, scrape up browned bits, and let liquid reduce.
  6. Stir in flour followed by chicken broth; return chicken to the skillet.
  7. Cover and simmer on medium-low until cooked through (165ºF), about 15-20 minutes.
  8. Finish by adding heavy cream and grainy mustard; cook until sauce thickens.
