  • 3 lbs beef chuck, cut into 2-inch pieces
  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 1 cup tomato sauce
  • 2 cups mushrooms, sliced
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary

Instructions

  1. In a Dutch oven over medium-high heat, add olive oil. Brown the beef chunks in batches for about 5 minutes on each side until golden brown. Remove and set aside.
  2. In the same pot, sauté onions, carrots, and garlic for about 5 minutes until softened.
  3. Return the browned beef to the pot and add mushrooms, thyme, rosemary, broth, and tomato sauce. Stir well to combine.
  4. Bring to a gentle boil then reduce heat to low. Cover and simmer for 2-3 hours until the beef is tender.
  5. Adjust seasoning if necessary before serving hot with crusty bread or over mashed potatoes.
