  • 1 tbsp olive oil
  • 2 lbs chicken thighs and legs
  • Salt to taste
  • 4 shallots (diced) or one medium onion
  • 1 rib celery (diced)
  • 45 thyme sprigs
  • 2 cloves garlic (minced)
  • 2 tbsp turkey bacon lardons (or chopped turkey bacon)
  • 2 tbsp apple juice
  • 2 tbsp flour
  • 85 ml chicken stock
  • 2 apples (peeled, cored, and cut into wedges)
  • 125 ml heavy cream

Instructions

  1. Preheat the oven to 180°C (350°F). Pat dry the chicken pieces and season with salt.
  2. In a large casserole dish, heat olive oil over medium-high heat. Brown the chicken on both sides until golden and set aside.
  3. In the same pan, cook turkey bacon until rendered; set aside with the chicken.
  4. Sauté shallots and celery with thyme until soft, then add garlic for an additional minute.
  5. Stir in apple juice, followed by flour to create a paste. Gradually add chicken stock and apple cider until well combined.
  6. Return the chicken and turkey bacon to the pot, adding more thyme sprigs; cover and bake for 30 minutes.
  7. Uncover and bake for another 30 minutes while you sauté apple wedges until lightly caramelized.
  8. Stir in heavy cream before serving; mix in cooked apple wedges.
