Ingredients

Scale
  • 2 lbs beef chuck, cut into cubes
  • 2 tbsp olive oil
  • 2 cups apple vinegar
  • 2 cups beef stock
  • 1 tbsp tomato paste
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 cups mushrooms, sliced
  • 1 cup pearl onions, peeled
  • 2 carrots, sliced
  • 2 tbsp flour

Instructions

  1. Prepare your ingredients by chopping vegetables and cutting the beef into cubes.
  2. In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown the beef cubes on all sides (about 5-7 minutes) and set aside.
  3. In the same pot, sauté chopped onion and minced garlic until translucent. Add sliced mushrooms and pearl onions; sauté until golden brown.
  4. Deglaze the pot with apple vinegar, scraping up any browned bits. Add beef stock and tomato paste; stir to combine.
  5. Return the seared beef to the pot along with sliced carrots and bring to a gentle simmer.
  6. Sprinkle flour over the mixture to thicken the sauce, stirring well to avoid lumps. Simmer for about 1.5 to 2 hours until the beef is tender.
  7. Serve hot over mashed potatoes or with crusty bread.
