  • 3/4 cup granulated sugar
  • 1/4 cup extra virgin olive oil
  • 1/4 cup sour cream
  • 3/8 cup chopped fresh figs (about 2 figs)
  • 3/8 cup fig jam
  • 3/8 cup old-fashioned oats or chopped walnuts
  • 8 Tablespoons unsalted butter (room temperature)
  • 8 ounces cream cheese (room temperature)
  • Pinch fine sea salt
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 3 1/3 cups confectioners' sugar
  • Ground cinnamon (for sprinkling on top)
  • Sliced fresh figs (for garnish)

Instructions

  1. Preheat your oven to 325°F and line a muffin pan with cupcake liners.
  2. In a mixing bowl, whisk together flour, baking soda, cinnamon, ginger, cardamom, and salt.
  3. In another bowl, beat eggs and sugar until light; add olive oil and sour cream.
  4. Fold in chopped figs and fig jam, then combine with dry ingredients until just mixed.
  5. Divide batter into liners and bake for 25 minutes or until a toothpick comes out clean.
  6. For the frosting, beat room temperature butter and cream cheese until smooth; mix in honey and confectioners' sugar until creamy.
  7. Frost cooled cupcakes and garnish with fresh fig slices and a sprinkle of cinnamon.
