  • 2 tablespoons butter
  • 3/4 lb top sirloin cubes
  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion, chopped
  • 2 medium carrots, peeled and chopped
  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese, shredded

Instructions

  1. Preheat your oven to 375°F.
  2. In a skillet over medium-high heat, melt butter with olive oil. Brown the seasoned beef cubes for about 6-8 minutes.
  3. Add chopped onion and carrots; sauté for another 4-5 minutes until softened.
  4. Sprinkle flour over the mixture and heat for an additional minute before adding apple cider and beef broth. Bring to a boil.
  5. Transfer to an oven-safe pan, cover, and bake for 1 to 1½ hours until meat is tender.
  6. Meanwhile, boil peeled potatoes until tender (15-20 minutes). Drain and mash with milk, sour cream, and cheddar cheese until creamy.
  7. Serve stew over mashed potatoes.
