  • 2 diced carrots
  • 2 diced stalks of celery
  • 1 diced onion
  • 1 teaspoon chopped garlic
  • 8 ounces tomato sauce
  • 28 ounces chicken broth
  • Freshly ground black pepper to taste
  • 2 tablespoons dried parsley
  • 1 tablespoon dried basil leaves
  • 30 ounces cannellini beans (drained and rinsed)
  • 3 cups ditalini pasta

Instructions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Sauté diced carrots, celery, and onion until softened; add garlic and cook briefly.
  3. Stir in tomato sauce and chicken broth; season with pepper, parsley, and basil. Simmer for 20 minutes.
  4. In another pot, boil salted water; cook ditalini pasta until al dente (about 8 minutes). Drain.
  5. Add drained cannellini beans to the soup mixture; simmer for a few more minutes.
  6. Stir in cooked ditalini pasta until well combined.
