  • 2 tablespoons olive oil
  • 1 pound mild chicken sausage
  • 1 cup chopped yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves garlic, minced
  • 24 oz jar marinara sauce
  • 1 quart beef broth
  • 15 oz can diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon basil
  • ¼ teaspoon crushed red pepper flakes
  • 1 cup dry ditalini pasta
  • 15 oz can dark red kidney beans, drained and rinsed
  • 15 oz can great northern beans, drained and rinsed

Instructions

  1. In a large stock pot over medium-high heat, add 1 tablespoon of olive oil. Brown the chicken sausage until crumbled and set aside.
  2. In the same pot, add another tablespoon of olive oil. Sauté chopped onion, carrots, and celery until the onions are translucent (about 5–6 minutes). Stir in minced garlic and cook for an additional minute.
  3. Return the browned sausage to the pot along with marinara sauce, beef broth, diced tomatoes, and seasonings. Bring to a boil then reduce heat to low. Cover and simmer for about 15–20 minutes until vegetables are tender.
  4. Cook ditalini pasta according to package instructions until al dente; drain well.
  5. Add cooked pasta to the soup along with kidney beans and great northern beans. Let simmer for a few more minutes; adjust consistency with water if needed.
  6. Serve hot topped with freshly grated Romano or Parmesan cheese.
