  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 1 cup frozen peas and carrots
  • 2 tbsp tomato paste
  • ½ cup beef broth
  • 3 large potatoes, peeled and chopped
  • ¼ cup milk (or plant-based alternative)
  • 2 tbsp butter (or vegan butter)
  • Shredded cheddar cheese (for topping)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil chopped potatoes in salted water for 10–12 minutes until fork-tender; drain.
  3. Mash drained potatoes with milk, butter, salt, and pepper until smooth.
  4. In a skillet over medium heat, cook the ground beef (or turkey/lamb) until browned; drain excess fat.
  5. Sauté onion and garlic until translucent; add peas, carrots, tomato paste, and broth.
  6. Simmer for 3–5 minutes until thickened.
  7. Grease a muffin tin and fill each cup with the meat mixture about two-thirds full.
  8. Top each with mashed potatoes and sprinkle cheese if desired.
  9. Bake for 10–15 minutes or until golden brown.
