  • 1 green onion
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water according to package instructions. Drain and rinse under cold water, then set aside.
  2. Grill fresh corn until lightly charred, cool, and cut kernels off the cob (or thaw frozen corn).
  3. In a large mixing bowl, combine mayonnaise, sour cream, lime juice, chili powder, salt, and pepper; mix until smooth.
  4. Add cooked pasta, grilled corn, cotija cheese, cilantro, and green onion to the bowl. Gently toss to combine.
  5. Adjust seasoning as needed and chill in the refrigerator for at least 30 minutes before serving.
