  • 1½ lbs shrimp (peeled, deveined)
  • 1 tbs butter
  • 1 tbs olive oil
  • 1 small onion (diced)
  • 5 cloves garlic (minced)
  • ½ cup white apple vinegar
  • 5 oz sun-dried tomatoes (drained and sliced)
  • 1â…“ cups half & half
  • Salt and pepper (to taste)
  • ½ cup grated parmesan cheese
  • Handful of baby spinach

Instructions

  1. Pat shrimp dry, then season with salt, paprika, and Italian herbs.
  2. Heat butter and olive oil in a large skillet over medium-high heat. Add shrimp and cook for 1-2 minutes per side until pink. Remove from skillet.
  3. In the same skillet, sauté onion for 3-4 minutes until softened. Add garlic; cook until fragrant.
  4. Stir in vinegar and sun-dried tomatoes; sauté briefly. Pour in half & half, season with salt and pepper, add parmesan cheese, and simmer until slightly thickened.
  5. Remove from heat; stir in spinach and cooked shrimp until well combined.
