  • 3 cups uncooked pasta
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 1 small red onion (chopped)
  • 3 mini cucumbers (chopped)
  • 1 cup little tomatoes (halved)
  • 1/2 cup Kalamata olives
  • 5 ounces crumbled feta cheese
  • salt & pepper (to taste)
  • 2 tablespoons red apple vinegar
  • 3 tablespoons olive oil
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic (minced)
  • 1 teaspoon fresh parsley (chopped)
  • 1/2 teaspoon dried oregano
  • 1 teaspoon (packed) brown sugar

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and rinse under cool water to stop cooking.
  2. In a jar, combine red apple vinegar, olive oil, Dijon mustard, minced garlic, parsley, oregano, and brown sugar. Shake well to mix.
  3. In a large mixing bowl, combine drained pasta, chopped vegetables, Kalamata olives, and feta cheese. Pour dressing over the salad.
  4. Toss gently to coat all ingredients evenly with dressing. Season with salt and pepper to taste.
  5. Serve immediately or refrigerate for at least 30 minutes to enhance flavors.
