  • 1 lb boneless chicken thighs (chopped into quarters)
  • 1 large onion (diced)
  • 1 carrot (chopped)
  • 4 small russet potatoes (peeled and chopped into quarters)
  • 3 cups chicken stock
  • 3 tbsp gochujang
  • 3 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 3 tbsp garlic (minced)
  • 1 tbsp white granulated sugar
  • 1 tbsp sesame oil

Instructions

  1. In a small bowl, mix together gochujang, soy sauce, minced garlic, sugar, and sesame oil; set aside.
  2. Heat vegetable oil in a medium pot over medium heat; sauté diced onions until translucent.
  3. Add chopped chicken thighs to the pot; brown on both sides.
  4. Stir in chopped potatoes and carrots; cook for 1–2 minutes.
  5. Pour in chicken stock and add the prepared sauce; bring to a boil.
  6. Reduce heat to low-medium and simmer for 15–20 minutes until chicken is cooked through.
