  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 812 small corn tortillas
  • ½ cup white onion (finely chopped)
  • ½ cup fresh cilantro (chopped)
  • Lime wedges for serving
  • Cotija cheese
  • Avocado slices

Instructions

  1. In a mixing bowl, combine lime juice, olive oil, minced garlic, cumin, chili powder, smoked paprika, oregano, salt, and pepper. Add chicken thighs and coat well. Cover and refrigerate for at least 30 minutes.
  2. Heat your grill or grilling pan over medium-high heat.
  3. Remove chicken from marinade; grill for about 6-7 minutes per side until the internal temperature reaches 165°F. Let rest before slicing.
  4. Heat corn tortillas on a skillet or grill for about 30 seconds per side until soft.
  5. Slice grilled chicken and place on tortillas. Top with onions and cilantro; serve with lime wedges and your choice of additional toppings.
